Alpha-amylase is an endonuclease that can randomly hydrolyze starch, glycogen, and their degradation products α-1,4 glycosidic bonds rapidly reduce the viscosity of colloidal starch solutions, resulting in soluble dextrins and oligosaccharides. It can be used to decompose starch substances in plant-based feed materials such as corn and wheat, thereby improving feed conversion and utilization efficiency.
